Cruciferous Coleslaw

I don't know about you, but with the amazing weather that we have been having over the last few months, my body has been loving light refreshing salads. This crunchy slaw with addition of the creamy cashew dressing is the perfect option. I love making a big batch and popping it in the fridge to munch on during the week. 

Cruciferous vegetables found in cabbage, broccoli, radish, kale, sprouts and leafy greens contains a compound called sulforaphane that supports our bodies natural detoxification pathways, lowers blood pressure, boosts liver function, reduces inflammation and contains brain boosting substances! Ingredients:

1 white cabbage, cored and thinly sliced

3 cups of kale, shredded

1 cup chopped coriander

1 large carrot, grated

2 cups rocket

1 cup grated radish

½ cup cherry tomatoes, sliced in half

Handful of cashews for garnish

Dressing:

½ cup cashew nuts, soaked in warm water for 1 hour.

100ml water

Juice of ½ lemon

1 tsp. Dijon mustard

2 garlic cloves

2 tbsp. nutritional yeast

1 tsp. salt

50ml extra virgin olive oil

Method:

1.Add all the vegetables into a large bowl

2. Make the dressing by blending all the ingredients

3. Pour the dressing on the slaw and serve immediately or keep in an airtight container for 2-3 days.

Health hasn’t always been my journey. In fact during my teenage years I suffered with disordered eating. Living off low fat/low calorie foods, diet coke and black coffee, my body stopped being able to function. My skin was dry, my hair falling out, I had terrible gut issues (bloating, gas, and constipation) I lost my periods, complained of being cold and was constantly exhausted. If only I knew what I know now, that my brain and body were literally starved of nutrients.

Gradually I began to see that my destructive behaviours and habits were robbing me from living and enjoying life. It was a long road of re educating myself, eating nourishing foods, learning self-compassion, and actually finding the enjoyment in food.

Over time my skin cleared up, my hair grew, my energy came back, hormones re balanced, and I saw firsthand the power of diet and lifestyle modifications in recovering my own health.

Fast forward a few years I am now a qualified nutritionist helping to educate people on the effects of food as medicine, food as enjoyment and food as fuel.
