Super Seedy Crackers

The name says it all really. These crackers are made from sunflower seeds, pumpkin seeds, chia seeds, flaxseed (linseed) and sesame seeds.

These healthier alternatives to shop bought crackers are jam packed full of fibre, which plays a vital role in keeping your gut healthy!

INGREDIENTS
1 cup jumbo oats, ground into flour
1/2 cup ground flax seeds
1 cup mixed seeds
1 tbsp mixed herbs + sea salt
1 cup water

INSTRUCTIONS
1. Add the oat flour, seeds and mixed herbs into a bowl. Add the water and mix well.

2. Leave the mixture for 5-10 minutes so that the chia seeds have absorbed the water. The mixture should be wet & stick together.

3. Line a baking tray with parchment paper. Use a rolling pin to roll the dough very thin in between the two sheets of parchment paper. The ideal thickness is about 3-4mm. Too thin and the crackers will be very fragile, too thick and they'll be more like a seed cookie than a cracker.

4. Remove the top sheet of paper and use a knife to cut the dough into snack-sized pieces

5. Bake in the oven for an hour or until nice and crispy. (switching the crackers over half way.

6. Remove from the oven, allow to cool, then break into irregular shards. Store in an airtight container.

Health hasn’t always been my journey. In fact during my teenage years I suffered with disordered eating. Living off low fat/low calorie foods, diet coke and black coffee, my body stopped being able to function. My skin was dry, my hair falling out, I had terrible gut issues (bloating, gas, and constipation) I lost my periods, complained of being cold and was constantly exhausted. If only I knew what I know now, that my brain and body were literally starved of nutrients.

Gradually I began to see that my destructive behaviours and habits were robbing me from living and enjoying life. It was a long road of re educating myself, eating nourishing foods, learning self-compassion, and actually finding the enjoyment in food.

Over time my skin cleared up, my hair grew, my energy came back, hormones re balanced, and I saw firsthand the power of diet and lifestyle modifications in recovering my own health.

Fast forward a few years I am now a qualified nutritionist helping to educate people on the effects of food as medicine, food as enjoyment and food as fuel.
