Apple, Banana and Turmeric Crumble

Soft and sweet cinnamon apples combined with a crispy oat topping using our Adaptogenic Happy Granola. This crumble recipe is a healthy vegan, gluten-free, oil-free and refined sugar-free dessert that your family and friends will love!

Ingredients

Filling

  • 8 medium apples

  • 1/2 cup coconut sugar

  • 2 tbsp cornstarch

  • 2 tsp ground cinnamon

  • 1 tsp vanilla extract

  • 1/2 tsp ground ginger

  • pinch of nutmeg

  • 1/4 cup water

  • pinch of salt

Topping

  • 1 bag Happy Granola (you can use any of our granolas)

  • 1/2 cup oats

  • 1/2 cup almond flour

  • 1/3 cup maple syrup

  • 1/4 cup almond butter

  • pinch sea salt

  • 1 tsp cinnamon

  • Handful of mixed nuts, chopped

Method

  1. Preheat the oven to 180’C and take out a baking dish - we recommend using a  33 x 23cm dish.

  2. Cut the apples into small cubes, you can peel them if you like but we prefer to keep the skins on for extra nutrition.

  3. In the baking dish mix all the filling ingredients until well combined.

  4. In a medium bowl whisk together the maple syrup, almond butter, sea salt and cinnamon until smooth.

  5. Add the granola, oats, almond flour and nuts to the maple syrup mixture and mix until well combined.

  6. Sprinkle the topping mixture evenly over the apples and gentle flatten it down.

  7. Pop it in the oven for 50 minutes or until the apples are very tender and the top is golden. Let it cool for 10 minutes to allow the crumble to get even more crispy.

  8. Serve with coconut yoghurt and vegan vanilla ice cream and enjoy!
